I had learned already never to empty the well of my writing, but always to stop when there was still something there in the deep part of the well, and let it refill at night from the springs that fed it.
There a couple of things you notice about Zac after a few minutes of conversation. One, he is very confident in his ability to make great beer. And two, he is one honest and laid back guy. The first is the product from his ten years of brewing experience with 1623 being the fourth brewery he has helped build. The second is most likely from his living in Colorado.
